Pumpkin & butternut season is here! Finally!
This recipe was introduced to me by a chef I used to work with. The recipe he created included some leaves but I prefer to leave them out as it makes more sense to me this way. I have slightly adapted it to make it mine but the essence of the original one is here: plenty of sweet veg, balanced by tangy feta cheese all coming together thanks to a sweet and tangy dressing… Autumnal salad at its best.
It makes a perfect supper and the leftovers are great to take to work for lunch the following day.
I say Miam Miam & Yum to that! Do you?
